Fatty acid

A fatty acid is a carboxylic acid (or organic acid), often with a long aliphatic tail (long chains), either saturated or unsaturated.

Depending on the context, fatty acids may be assumed to have at least 8 carbon atoms, e.g., caprylic acid (octanoic acid).

Essential fatty acids are the polyunsaturated fatty acids.
